Better than Domino's

The finished lightened up white pizza.
We've been on a kick of eating from recipes we've gotten off of Pinterest. (And to clarify the "we", Chef cooks and I find the recipes--as if you hadn't guessed that already). I was thinking of trying the cheesy quinoa tonight, but we ran out of milk. So I was kept late at an appointment and Chef was left to try to make something else--without any protein thawed or ready. We have a weekly list of recipes that we use to pull our nightly selection from. Typically, I've pulled chicken or beef or whatnot from the fridge to have it ready.

In this case, Chef whipped up a white pizza that I'd pinned recently from the blog Emily Bites. Being that I know my husband, I told him to look it over and jazz it up. And jazz it up he did.

He seasoned the crap out of the chicken breasts and cooked them in a pan then de-glazed the pan with a little white wine. He then carmelized some garlic (like 3 times as much as the recipe calls for because I LOVE garlic) and added some red pepper flake. He then added that to the Classico Light Alfredo sauce the recipe called for. He substituted basil for spinach (because he could just pluck the basil from our patio) and it was a masterpiece. Seriously it was one of the best pizzas I've ever had and definitely the best pizza I've had in LA. It was cheaper, more delicious, healthier and quicker than any delivery or frozen pie. And that's saying something. From the moment I walked in the door to the moment I was stuffing my face with pizza, it was 15 minutes (he did, however, cook the chicken and prep the topping before I got home to keep me from getting hangry).

Results are pictured and my waistline is still the same size, yet completely satisfied. It felt so decadent. I feel like Oprah when she had Bob Greene and Dr. Phil and the whole damn team helping her lose weight. Except I've got Chef and he's all of them rolled into one. I'm so lucky.

If the picture doesn't convince you, your stomach will--you should be following me on Pinterest.

Back in the Health Saddle Again

From my lunch time walk
Here's the bad news (or at least bad for me): I gained 11 lbs since hitting my lowest weight in LA. 13 pounds! And six of that was over the holidays. The rest was just the sheer laziness of being me.

The good news: 4 of those pounds came off in the last week of watching what I eat. So I'm only at a 9 lb net gain. Not great, but not the worst thing that's ever happened to me.

I watched an old episode of Oprah last night that was her "last show about weight loss." I recorded it because my friend Mandy was a guest on the show (she was one of the invited that had lost more than 100 pounds--and kept it off). She looked fabulous on the show as she's fabulous in person, as well, but the more I watched the more I realized just how delusional I like to be. I have to face the fact.

I am going to battle my weight every day of my life, for the rest of my life.

That sucks. I wish I was one of the lucky people who never have to think about it, but after seeing so many Facebook pics of people who I thought were "those kinds of girls" in high school ("I don't know why I don't gain weight, I just don't!") and seeing that the calories they packed in back them have come a callin', I realize I'm not alone. I've got plenty of other attributes and skills that I can fall back on in the mean time. But this is something, and not even that unusual of a something, that I'm going to have to face.

So, in honor of that, I started a new workout routine to spice things up. I'm still doing my 30 minutes of elliptical each morning, but I've added The Firm Express taped workouts (Thank you, Chef for getting them for me because I ASKED!) to my repertoire three times a week. I did the first one yesterday morning. Each workout is only 20 minutes and I knew my heart rate was up, but I didn't think I was working anything out until this morning. My butt and legs are achy. that good kind of achy you get when you've worked something you haven't stretched in a while. I'll let you know when I see some results. I'll probably even share the "before" pics that I made Chef take of me. But the thing about "Before" pics is that they only look good in context of the "after" so I'm not just going to post those willy nilly.

I'm back to counting calories and trying to eat smaller meals/snacks more frequently. I even took a walk at lunch today. Although to be honest, that had less to do with exercise and more to do with a study I read about how sunshine at noon helps stop the post-lunch crash. Plus it's like 80 degrees and beautiful today, so how could I not?

Only Six Shopping Days Left Until My Birthday

Just a friendly reminder and an opportunity to figure out what you're going to get me. Emails, phone calls, and Facebook posts are recommended.

Unless your name is Chef. Okay, your nickname is Chef. Then I know you've already taken care of it, because I started musing on a list of things I wanted to do a few weeks ago and you're a smart and loving man who likes lists.

So, in my state of mind a few weeks ago, I decided to make this an awesome birthday. Last year was an awesome one too, and I realized that it was the little things that made the day great. Like going to any store that I wanted to. Eating all of my favorite things. Spending the day off of work and with Chef.

This year's birthday will be nice and my list got so long that we decided to expand the celebration to Friday AND Saturday (my actual birthday). I will NOT be counting calories on either day (sorry, Wrye Family Challengers--I promise not to go too overboard). Here are my some things on my list right now:
  • Seeing a sunrise or sunset on the beach
  • Having donuts and coffee
  • Eating dinner at Ruth's Chris (Thanks, Dad and Robin, for making this one happen as our Christmas gift)
  • Pizza from either The Good Pizza in Culver City or Deano's Gourmet Pizza at the Hollywood Farmer's Market
  • A massage (Chef already got me this one! Just got to make the appointment)
  • A trip to Sephora to use a gift certificate that I got for Christmas
  • Flowers
  • A trip to a great independent bookstore
  • A cupcake from The Frosted Cupcakery (that's a picture from their website below)
  • A drink at the Library Bar in the Roosevelt Hotel
  • To not have to clean litterboxes
  • Take the subway somewhere--although I may relent and just scratch this one
Does anyone have any suggestions? I think it's looking pretty good to me. Since Oprah, Tom Selleck, Heather Graham, Greg Louganis, William McKinley and I share a birthday, I think it would be a good idea for us all to get together for dinner. Of course, McKinley might be pissed he was assasinated, but he'd be good company.

T Minus Three Hours Until I'm 30

I woke up this morning a little depressed, as I prepared for my last few hours of my twenties. It was less about turning 30 and what I try to think of as just another birthday. It was more about missing my mom. Something about this time of year always makes me sad. When I think of our birthdays just a few weeks apart, I think of us when we were living together alone. . .just the two of us. We would each try to outdo each other making our birthdays special.

But just as I was reflecting upon my life thus far and what I've accomplished and how work is going to have me slammed for the next few weeks, the mail came. What a weird thing. The paper mail is so antiquated in today's digital age, but who doesn't still get excited when they get a letter or card or something other than direct mail. But I'd gotten a slip of paper that said I had a package at the post office. I expected it to be a present or something from a friend. Instead it was much better.

Today I got five copies of the book my story is published in. It was the first time that I've been published in book form. Magazine, newspaper, online and other forms, but never in a book. It totally lifted my spirits. I felt proud and excited to enter a new decade. This one hasn't been so bad. It started off rocky (mom dying), but ended up spectacular with many things I'm thankful for: Chef, my relationship with my dad, niece and nephew, move to Nashville, job trials and tribulations and successes, and a great group of friends to help me through. Not too shabby for the first 30 years. Can't wait to see what the next 30 will bring.

Hopefully one thing is Saint Oprah Day. Oprah and I share a birthday and I'm hoping fellow Catholics will overlook her religion and the 100+ years it takes for canonization and make her a Saint. Then I hope it becomes a federal holiday so that not only myself but the world can celebrate the day together. And that I won't have to take Paid Time Off to get the day off like I'm doing tomorrow. Maybe in the next 30.
